Baked Oatmeal

YIELD: 1 9x9in. pan (serves 4 for a full meal, but as a side/desert, could be cut into 9 pieces)

Ingredients:
    • ½ c. Melted Butter
    • 1 c. Brown Sugar (I put in ¾ c.)
    • 2 Eggs
    • 1 tsp. Salt
    • 2 tsp. Baking powder
    • ½ tsp. Cinnamon
    • 1 tsp. Vanilla
    • 3 c. Quick Oats
    • 1 c. Milk
    • Optional: ½ c. raisins/craisins; ½ c. nuts
Directions:
    • Preheat oven to 350F
    • Mix the butter and sugar together
    • Add the remaining ingredients
    • Put into buttered (greased) 9x9 pan
    • Bake for 20-25 minutes (I put it in longer, as I like the crunchy top)
    • Let cool for 5 minutes; cut and serve
Variations:
Apple Cinnamon
    • Cut the above sugar to ½ - ¾ c.
    • Peal, then grate 2 apples (any kind-I just use what is in the fridge, usually Gala or Red Delicious)
    • Add 1 grated apple to oat mixture
    • Sprinkle the remaining apple over oat mixture in pan
    • Sprinkle ¼ c. sugar (white or brown) on top of the grated apple
    • Bake for 30-45 minutes until golden and crunchy on top

Desert Dish
    • Use full amount of sugar with the original recipe; with Apple Cinnamon variation, use ¾ c.
    • Serve with ice cream
